The overall premise of the course and the book: It also helps us better understand my approach in writing the book and in organizing this course: The us is a nation of immigrants; Among their many contributions, the diverse culinary traditions of non-anglo ethnic groups have profoundly transformed and enriched america"s gastronomy and palate. The book, as well as the course, is far more than just a story of food per se. Rather, it tries to understand whether and when, as well as the extent to which, different immigrant groups transplanted a cuisine to the us. These are broad and complex issues; and we do not have the time to cover them all in the lecture and assigned reading. Many of you have been making valuable contributions.
