Coffee used to be placed in warming trays > gourmet shops. 4 companies = 60%, a few companies control most of the coffee. Gourmet coffee industry is a fraction of it. Coffee is 2nd highest trade commodity after petroleum. Ethiopian food used many spices from far away (imported) Money for this came from their sale of coffee. Associated w/ intellect, politics, art > urban culture of discussion and debate. 1830-1930: coffee became an everyday drink for all of society. Coffee lobby launched ad campaigns which lead to everyday drinking. Office settings = coffee and tea for work. Coffee grown in many places associated w/ colonialism. Young people no longer drinking coffee, instead to soda. Eventually associated to culture and high class (higher prices at gourmet shops) Wages of labor decline > highly paid young, educated elite (yuppie), also campaigned to college students.
