Document Summary

Nucleic acids: carry genetic blueprint and instructions for function of a cell. Proteins: structural, protective, contractile, regulatory, transport, storage, membranes: meat is mostly water. Hydrogen bonds: glycogen, a form of sugar stored in muscles, is broken down in muscles to form lactic acid. When an animal is slaughtered, this acid builds up causing a change in ph levels. Acid build up causes muscles to overlap and can result in tough meat. Molecules interact and bonds are broken or built: raw meat has protein molecules that are coiled up and held together by bonds. Arterial blood ph = 7. 41 and venous blood ph = 7. 36. Describe the side effects of a decreased blood ph. Elevated ph: blood more basic, leads to alkalosis, fatigue/drowsiness, confusion. Decreased ph: blood more acidic due to increased co2, leads to acidosis, fatigue/drowsiness, confusion, shortness of breath, sleepiness, headache, possible death: describe the buffering system in blood.
