What are the 6 major classes of nutrients?
o Carbohydrates: organic, energy-yielding (4 kcal/g), macronutrient
o Lipids (fats): organic, energy-yielding (9 kcal/g- most calorically dense),
macronutrient
o Proteins: organic, energy-yielding (4 kcal/g), macronutrient
o Vitamins: organic, micronutrient
13 organic vitamins
Fat soluble (A, D, K) and water soluble
o If a vitamin has a UL, and you consume more than this,
there is potential for adverse effects. This is true for both
water soluble and fat soluble vitamins.
Each has a special role to play
Facilitate energy release
Do’t poide eegy
Almost every bodily action requires assistance from vitamins
Vulnerable to destruction
Heat (as from cooking), light (A), and chemical reaction
o Minerals: inorganic, micronutrient

There is a requirement of how much water you have to consume (food
from food and just straight up water)
o Only macronutrients provide calories or yield energy
o Micronutrients do not yield energy
o Macro v. micro: your body requires more macronutrients than micronutrients
