Lipids prevent membrane to become too fluid or too stiff: phospholipids are the dominant lipids in membranes. No energy is required to for a bilayer, it is a spontaneous rxn. The bond arrangements are favoured because they represent the lowest energy state: membrane fluidity. Fluidity is dependent on temperature and the bond arrangements (saturated-more straight shape, while unsaturated-less straight due to the double/triple bonds, thus less pack: enzymes, desaturases, help the reaction to form unsaturated fatty acids during fatty acid synthesis. Changes in the transcription of a gene often result in changes in the abundance of its transcript (mrna) and resulting protein abundance. Figure 5. 6b shows that transcript abundance of a desaturase gene increases as the temperature is lowered. This results in an increase in synthesis and overall abundance of the desaturase enzyme. Higher amounts of denaturases would result in an increase in the abundance of unsaturated fatty acids.
