Asian and african food influences (9th course in text) Japan, china, thailand, korea, taiwan, indonesia, cambodia, vietnam, laos, burma, malaysia, Foreign influences conquerors and traders intermingling of culture and food. Varies by country e. g. myanmar (burma), thailand, malaysia, indonesia, cambodia, laos and southern. Northern vietnam and most of other countries except thailand chopsticks. Wheat round and flat breads or baguettes (colonial influences), noodles. Meat is determined by religious beliefs (islam, buddhism, hinduism large influences); seafood more popular closer to coastal area unless prohibited. Peanut oil for cooking and creative use of spices; also fish sauce for flavoring. Variety & exotic fruits e. g. starfruit, breadfruit, coconut, papaya, kumquat. Demonstrate courtesy and respect with linguistically appropriate greeting esp if non-english speaking client. Lack of eye contact signifies politeness and respect. Family traditions and customs take precedence; incl. alternative medicine be respectful of these. Family (both nuclear and extended impt); oftentimes community as well so important to engage others.
