Fermentation is the process of yeast acting on sugar in the presence of water. Yeast will die off at 15% alcohol and fermentation will stop. Cereal grains can be used but they contain starch rather than sugar and must be converted before fermentation can begin. Malt = germinated and then kil-dried grain. In 1784 benjamin rush wrote about the problems of heavy alcohol consumption. He noticed a relationship between heavy drinking and jaundice, withdrawal symptoms (korsakoff"s psychosis) and epilepsy. He said that liquor damaged the persons morality, and was first to notice addiction.
