Sensory tests are used to evaluate the quality of food but there is two different perspectives that this can occur from: consumers will use a holistic, intergraded evaluation. Ex. trained judges will pick out wine notes. New product development: creating brand new products and flavors of foods. So we know which of our 5 new flavours we should launch if we are only gunna put 2 or 3 on the market right now for example. When we want to modify a product (i. e. reduce sodium) we give consumers a bunch of modifications to see where the products aren"t evaluated as different and therefore, that modification is acceptable. Consumers then have to check in the box somewhere between: like extremely dislike extremely. Even if we expect the consumer to like the product we have to show the whole scale in order to avoid bias.
