Vitamin a, d, e and k are grouped together due to their solubility in fat. They require bile and dietary fat for absorption. Once they are absorbed, they are transported with fats through the lymphatic system in chylomicrons. Excess of these vitamins can be stored in the body and can be retrieved when needed. Intakes can therefore vary without a risk in deficiency as long as the intake over a period of weeks/months is met. Solubility in fat limits their routes of excretion and thus increases the risk of toxicity. Deficiencies of vitamin a and d can be eliminated by: supplementation, fortification. This however increases the risk of consuming toxic amounts of these vitamins. Working indoor jobs, exercise at indoor gyms, protect ourselves from the sun by using sunscreen. Decrease in fruits and vegetables hence decreasing intake of a, e and k. Limits the ability to get adequate vitamin d from sunshine.
