Soy proteins are found in soybeans and are an excellent source of amino acids and substitute for meat protein. The hydrophobic and hydrophilic properties within proteins help stabilize water-gel systems. Wheat gluten is hydrophobic and is a water-insoluble protein with capabilities such as blending ingredients in order to establish desired texture. It is not found naturally the way soy proteins are. Wheat gluten can bind molecules and is very strong and elastic, such properties are important when determining texture of food. Carrageenan is a plant based vegetable gum and an alternative to gelatin that has a minimal caloric count.
