Proteins and to a lesser extent fats, are essential for building cell structure. Oxygen: all nutrients are useless without oxygen present. Chemical reactions that release energy from food are oxidative reactions, therefore humans can survive without oxygen only for a few minutes. Water: accounts for 50-60% of our body weight and is the single most abundant chemical substance in the body. Provides watery environment necessary for chemical reactions and the fluid base for body secretions and excretions. Normal body temperature: must be maintained for chemical reactions to occur at a life- sustaining rate. The reactions become slower and stop under 37 degrees. When body temp is to high, chemical reactions occur at a frantic pace and body proteins lose their characteristic shape and stop functioning.
