These qualities are constantly changing and we can see this when johnston is discussing the authenticity of burgers. For the elite, an overly expensive burger may sound worthy. But for the majority of people, an expensive burger is just another way of seeming snobbish . This concept of deciding between right and wrong for one particular subject is similar to people distinguishing between what police officer behaviour is acceptable and what is not. A few of the main concepts identified by the foodies author on food culture are democratic ideology, and the ideology of status and distinction.
