The hydrophilic and hydrophobic layers restrict movement, keeping the insides in and the outsides out. Because phospholipids are not bound together, the cell membrane is very lexible or luid . Unsaturated faty acids don"t line up well. Saturated faty acids stack well next to each other. Wiggles in with the hydrophobic tails to make the cell membrane more sif. Even though phospholipid bilayer provides a barrier, some substances can sill get across.
