Document Summary

Foods and nutrition: chapter 6 the proteins and amino acids. Foods rich in protein carry an array of vitamins and minerals including b12, iron, zinc and calcium, but generally lack vitamin. Contain an amine group (n), an acid group, a backbone, and a side chain. A proteins shape enables it to perform different tasks. Amino acids can differ in size, shape, and electrical charge. When different amino acids join together it creates a polypeptide bond. A peptide bond is a chemical bond formed between the amine group end of one amino acid and the acid group of the next. Each amino acid carries an electrical charge that attracts or repels various ends of each amino acid resulting in different shapes. Essential amino acids cannot be synthesized in the human body. Therefore, they must be supplied by the diet. Normally non-essential amino acids, but they must be supplied by the diet when the body cannot meet its needs.
