Globalization is used to describe the process by which companies or elements of culture spread and exert influence on a worldwide scale. Similarly, cultural diffusion refers to the spread of cultural beliefs, preferences, and activities. The two concepts can work hand- in-hand to spread culture from the global, to the local scale. Globalization is often thought of as working from the west to the east, but in the case of sushi this was reversed, originating in japan and spreading toward america. Within america, then, sushi spread through hierarchical diffusion. It can be assumed that as the sushi industry grew in japan, production cost of harvesting and preparing fish for sushi dropped, leading japanese fish companies to spread globally to increase revenue and consumer base. The overall increase of global communication may have also increased global awareness of sushi as an element of japanese culture, which in turn could raise global demand.
