Fatty acids- carboxylic acids wth hydrocarbon chains ranging from 4-36 carbons. Fatty acids w no double bonds are saturated fatty acids. Fatty acids with double bonds are unsaturated fatty acids. Only polar part of molecule is the carboxylic acids head. Naming fatty acids= # of carbon atoms in molecule: # of double bonds (delta where they are located(cid:895) ex. (cid:1005)8;(cid:1006) (cid:894) 9. 12) Double bonds in cis config. (makes a kink in the chain) Double bonds are methylene bridged and not conjugated meaning they go double-single- single-double.
