Fluid mosaic model: describes the general structures of biological membranes e. g: phospholipid bilayer. Biological membranes: similar in structure, as described by the fluid mosaic model, but differ in the number of proteins and lipids. These membranes are dynamic and are constantly forming, transforming, and breaking down. Also have carbohydrate on the outer surface that serve as recognition sites. Phospholipids: form a lake in which a variety of proteins float. Have a charged, hydrophilic head, and a fatty acid hydrophobic tail. In an aqueous layer, the phospholipids form a bilayer spontaneously due to its amphipathic structure. This helps the membranes fuse during vesicle formation, phagocytosis, and etc phospholipids vary greatly in the length, degree of unsaturation, and the polar groups present in the fatty acid chain. Example: in animal cells, a fatty acid present is cholesterol, which composes up to 25% of the cell membrane which is important for membrane integrity.
