Document Summary

The process of mixing lipid and water by adding an emulsifier. The villi and microvilli of the small intestine cover 1/3 of football field. The intestinal cells absorb nutrients from the mixture within the small intestine and deposit them into the blood and lympth. They adjust to the body"s needs (if ca is low it will absorb more) Severe under-nutrition can decrease the absorptive surface of the si by 1/10th. The intestinal tract is lined with small projections called villi and microvilli which have enormous absorptive function. After the nutrients pass through the villi, the blood and lymph start transporting nutrients to cells. The lymphatic vessels transport the products of fat digestion and a few vitamins (fat- soluble) The blood vessels carry the products of carbohydrate and fat digestions, as well as most vitamins and minerals from the intestinal tract to the liver. Digestion and absorption are complete by the time the contents enter the colon.
