Food moves down it once swallowed: peristalsis- wave of muscular contractions that move food down the esophagus, can swallow at any time because of peristalsis. In response to nerve signals, smooth muscles in esophagus contract and relax in a coordinated fashion. This is a reflex (automatic reaction to stimulus). Stimulated by act of swallowing: modified esophagus: the bird crop, crop- in many bird species, widened segment where food can be stored and, in some cases, processed. In many groups, crop is simple sac that holds food, interpreted as an adaptation that allows them to eat large amounts in short time. It has also evolved independently into a digestive organ in two leaf- eating species, hoatzin and kakapo: leaves are difficult to digest because of cellulose. Bacterial in the enlarged crop of the species are capable of breaking down cellulose. As a result, fatty acids leak out of the crop and into the stomach and are used as food.
