NUTR1023 Lecture Notes - Lecture 1: Omega-3 Fatty Acid, Coronary Artery Disease, Food Composition Data
Module 1 lecture notes !
L2 - Which nutrients, foods and dietary patterns are best for our health?!
Some examples of individual nutrient effects on health:
•reducing sodium reduces blood pressure
•Ability of folic acid to reduce risk of neural defect
•Higher intake of omega 3 fatty acids and reduced risk of cardiovascular mortality
Understanding individual nutrient benefits is not beneficial because we don’t consume
nutrients in isolation.
Relationships between foods and health outcomes :
•vegetable intake and coronary heart disease. 15-25% reduction in heart disease with
each additional serve of vegetable.
•Fruit and veg and reduced mortality for cardiovascular disease
•Nut and decreased risk of sudden cardiac death
•Oat bran can reduce risk of coronary heart disease
•Egg does not have impact on coronary heart disease and stroke
Combination of food and dietary patterns on health
•many dietary patterns had good benefits
•The common element in all dietary patterns that are good for health is:
food not too much, mostly plants
•key overarching principles for a good dietary pattern:
-high in vegetables and fruits, Whole grains, low and non fat diary, Seafood,
Legume,Nuts
-Moderate in alcohol
-Lower in red and processed meat
-Low in sugar and refined grains
•the report stated that it was not important to eliminate food groups or conform to a single
diet for a healthy dietary patterns.
Lecture 3 - Nutrition in the community !
•A good model for understanding nutrition is the life stages model
-we know that our food and nutrition requirements will change as we grow
The life stages model
Pregnancy and lactation - basic requirements
Childhood and adolescence - requirements for growth, development, obesity prevention
Adulthood - requirements for chronic disease prevention
Older adults - requirements for aged care
Tools used to identify nutrition issues in the community:
Various dietary assessment methods
