• Regulate fat and protein metabolism
• Energy source for nervous system
• Synthesised into muscle and liver glycogen
• Grains, fruit, veg, milk, sweets
Early study found that when athletes had a high-carb diet (increased glycogen
stored in muscle) could exercise for longer without exhaustion
