Sparkling wine has co2 and it was produced in the 17th c. Any kind of produce with sugar (3 level) can be fermented and turned into alcohol, most fruits are berries. The fruits used to make wine are 3x more sweeter than those in the grocery stores. Make wine from the sap of trees - palm trees = palm wine. Beer is a more complicated process than fruits and berries. It has starches that need to be transformed into sugar.
