Banana and pineapples were a rare food and showed wealth. The canal was built to be able to move goods from place to place. With trains you could move good, at a higher quantity and much faster than by boat. Trains had refrigeration to keep foods fresh. International division of labour ( another way to think of this concept) Concept tries to capture the specialization of the international economy in terms of food production. Concept tries to capture inequality of international system of food production. Global north ( lots of variety and choice) Canada is major producers of: lentils, potatoes, maple syrup etc. We can afford what is provided to us in the grocery store. Lots of the food in london was coming from uruguay and argentina. Grocery store first came around in the 1950s-1960s. Shopping cart is also an innovation of the grocery store. Consumers do not know how to cook food properly so they must be taught properly.
