Water: an essential nutrient required for survival, water is a polar solvent: Solvent: a uid in which one ore more substances dissolve. Polar: molecule that has a positive charge at one end and a negative charge at the other: the polarity of water comes from hydrogen and oxygen, blood is 90% water. Blood transports oxygen and nutrients to cells and removes carbon dioxide and waste products: the body is about 60% water. Saliva assists in chewing, taking and swallowing. Spinal uid protects against shock: water helps regulate body temp. by slowly holding heat and changing temperature slowly. *** splitting apart amino acids (aa) for disaccharides to polypeptides. Osmosis- cause uid to move in & out of cells in response to levels of concentration of dissolved substances. *note:* the sugar added to the strawberry creates an osmotic reaction where the water in the strawberry is drawn out.
