For most of the past people have been foragers, until they started to make the transition into being farmers and hunters. Which parts of the animal are the most valuable to the consumer. Anything deer shaped, goat shape, cow shaped, had the same pattern for bone utility, back femurs had the most nutrients, where the head and feet had the least. If hunters need to transport a carcass in parts, they should first select the high utility bones (bones that have the most use) Mostly low utility bone, probably meant that they were scavengers. Mostly high utility bones, probably meant that they were hunters. Both low and high utility bones, could show signs of animal domestication. Unlike humans now a day, in most species, the mortality rate for infant is really high. Pompeii would be a good example of a catastrophic profile -> has to be a disaster that destroys everything.
