Taste and smell: receptors are classified as chemoreceptors, respond to chemicals. Airborne chemicals that dissolve in fluids of the nasal mucosa. Taste gustation: taste buds occur in the mucosa of the mouth and pharynx. Most found on tongue surface, contain taste receptors: located within the tongue papillae: Vallate papillae (back of tongue: globular collection of 50-100 epithelial cells each, each contain 2 major cell types: Basal cells: contain long microvilli which extend through a taste pore to the surface of the epithelium. Bathed in saliva and contain dissolved molecules that stimulate taste: cells in taste buds are replaced every 7-10 days. Taste sensation and gustatory pathway: five basic qualities of taste: sweet, sour, salty, bitter and umami. Impulses are transmitted to the thalamus and ultimately to the gustatory area of the cerebral cortex in the insula for conscious perception of taste. Some axons travel to the limbic system to elicit an emotional response.
