Acyl carrier protein binds to fatty acid and then brings it to the enzyme. Whatever two carbons fall beside the catalysis site is where the double bond will be placed. Physiologic importance of unsaturation through the membrane through diffusion, occurs very quickly. Organisms who live in different environments have to deal with a changing temp and therefore an alteration to the fluidity of the membrane. Overtime, and a decreasing temp, the amount of desaturase also decreases.
