FSN 204 Lecture Notes - Lecture 3: Screw Conveyor, Fluidized Bed, Potato Chip
Document Summary
Common unit operations in the food industry: material handling, cleaning, separating, disintegrating, size reduction, pumping, mixing & forming. Covers everything from harvesting to movement of product in the plant. Most relevant here is material handling inside the plant. Water flumes: conveys raw commodities into the plant, (also used in separation as ripe commodities usually float and unripe ones sink) Conveyors: many designs available for various products: belt conveyors, bucket conveyors, vibratory conveyors: for sizing, orienting and sorting, potato chips, cranberries, uberries, magnetic conveyors: for metal containers. Gravitational shoots: empty metal containers, powders, spices etc. Fluidized bed: light weight, usually dry materials. Bucket elevators: move seasoned potato or tortilla chips up to fillers, raw and wet sugar is lifted to allow gravity feed later on. Screw conveyor: moves powdered and granular foods. Unit operation in which contaminating materials are removed: metals, stones, soil, leaves, twigs, insects, also pens, pencils, car keys, paint chips, etc.
