May alter ph of acid foods so that c. botulinum can grow. Alcohol and carbon dioxide are by-products of growth. Need a host to carry out life cycle, do not grow in food. Trichinella larvae: larvae mature into adults in the host"s small intestine, female worms give birth to larvae, larvae enter the blood stream, end up in the host"s muscles. Under optimum conditions a cell divides every 20-30 minutes. Some of the rod-shaped bacteria produce spores. Bacterial spores are extremely resistant to heat, cold and chemical agents. Spores: occur in response to unfavorable growth conditions, increases ability to survive processing treatments, when conditions are favorable, spores germinate into vegetative, they resume growth and metabolic activities. Most common source of organisms and spores are soil and water.
