Acetyl chline has an ester bond that is unstable, that will be hydrolyzed in the presence of esterases. You also have a basic quandary ammoniom cation that is positively charged (very water soluble). So in the synapse there is acetyl choline esterase that can quickly break down the ester bond and break it into acetic acid and choline. Choline can be taken back and stored and reused for synthesis of acetyl choline.
