Finding: dietary source of nitrogen vital for life. Early scientists thought nitrogen was single substance with nitrogen. Many different types of proteins; all proteins contain nitrogen but are different in composition. In blood: blood protein (opening at top = spot for vitamin a to fit) Vitamin a carrying protein in blood stream. Zoom in: chain of linked subunits - each subunit is different from surrounding. Subunit = amino acid (the basic subunit of protein) Link between amino acids = peptide bond. Amino acid r groups want to be away from watery environment and tuck in near each other, creates a loop. Arrangement of amino acids are predetermined from cow"s dna. Amino acid order/sequence dictates structure and purpose/function. The order/sequence of amino acids determines structure which determines function.
