Humans were lactose intolerant-- if they let milk sit out- it would ferment, making it consumable for humans (yogurt cheese) 7000 years ago, humans can maintain lactase beyond infancy-- we can now consume milk. Humans are not the only species who drink other animal"s milk. Starting with milk, bacteria, enzymes, and salt, you can make up to 2000 different cheeses. India and china produce a lot of milk but don"t consume a lot at all-- use mainly as exports. Less cows in us, but we are producing a lot more milk. Cows are producing more milk due to genetic engineering.
