Milk production began more than 6000 years ago: we started consuming milk as fluid-milk about 7500 years ago. Domestication began practically everywhere on earth 10-12,000 years ago: ruminants, goats to begin with (probably) Thrive in environments where other animals have trouble. Common in areas where production systems are limited by: climatic, topographical, economic, technical, or sociological factors: sheep & goats were a good source of inexpensive, high-quality protein. Sheep were found on all continents and nearly all countries: most ruminants except mare & donkey, sheep are the most numerous of milk/meat animals. Herbivorous, multipurpose animals were chosen to satisfy need of milk, meat, clothing, etc: herbivorous animals are less dangerous, easier to handle, and did not compete with man for nourishment. Milk composition is incredibly variable across species and even breeds of cows. Biological function of milk: nutrient source for young mammal growth. A calf needs about 2300 lbs of milk until they are weaned.
