NUSC 1165 Lecture Notes - Lecture 1: Malnutrition
Document Summary
Nutrition is a science that studies the interactions between living organisms and food. A nutrient is a substance that an organism needs to support life: essential nutrients. Must be supplies by diet: non-essential nutrients. Classes of essential nutrients: carbohydrates, lipids (fats, protein, water, vitamins, minerals. Macronutrients include: carbohydrates, protein, fat, water. Macronutrients provide energy to the body except water. Amount of energy is measured in kilocalories (kcal) or kilojoules. Alcohol (not an essential nutrient but provides calories) Micronutrients provide no energy for the body but are necessary to preform body functions. Important for good health but required in small amounts. Both micro & macro nutrients help the body stay healthy. Biochemical reactions in body help release energy in carbs, fats & proteins. Energy maintains body functions & fuel physical work. If more energy is consumed than needed body weight will increase. Most of weight is water, fat & protein. Nutrients help form & maintain shape and structure of body.
