Essential fatty acids: composed of fatty acids of varying lengths combined w/ a glycerol molecule. All bonds on c atom are taken by h saturated fatty acid. Fats are solids: oils are composed of short chains of fatty acids or unsaturated fatty acids, fats contain saturated or longer-chained fatty acids, fats found in plants and animals are gen in triglyceride form.
