NTDT301 Lecture Notes - Lecture 1: Commensalism, Omnivore
Document Summary
Food is considered any substance providing nutrients to maintain life and growth when ingested. Core foods: staples in the diet, usually consumed daily, typically complex carbohydrates. Secondary foods: widely but less frequently consumed. Core foods are served with complementary items to improve palatability: add flavor to starchy staples to encourage consumption. Legumes are used as complementary or secondary foods: provide for a nutritionally adequate meal. Changes only occur with peripheral foods not core foods. Ways food is flavored and seasoned is very significant: transforms feeing into eating. We assign characteristics to people who eat in certain ways. Foods rated as being good or bad -moral implication. We learn food preferences from trusted or valued others (peers, teachers, valued social groups) Humans are omnivorous: consume/digest wide selection of plants and animals, adapt easily almost all earthly environments, no single food provides all nutrition for survival, must be flexible yet cautious to avoid harmful foods. Dilemma: need to experiment yet be cautious.
