A way prey can protect itself is poisions. Poision dart frogs, skin has compounds that are toxic to larger animals. Doing this has a drawback, because the predator has to eat them first, then it kills them. Prey is still killed, even if predator is too. However, the point is, overtime, the predator learns to avoid the bright colored one.
