Chapter 2 Phytochemicals & Functional Foods
Phytochemicals: plants compounds of carrying out biological / biochemical
activity within the body when consumed
Refined foods do not have phytochemicals
Help prevent the forming of potential carcinogens, oppose forming of
cancer in the body
All foods are functional to some extent all have taste, aroma, and
nutritive value
Functional Foods: appear similar to conventional foods and consumed as
part of a usual diet with psychological benefits / ability to reduce risk of

morale
CONs: provides empty calories, disrupts tissue’s metabolism of nutrients,
alcoholics need nutrition therapy, decreases appetite
Chapter 4 Sugar & Alternative Sweeteners
DRI recommends a max of 25% of the carbohydrate intake to be from
sugars
Sugar does not make you obese, diabetic, kills your heart, or hyper
