Different factors, such as enzymatic concentration, enzyme source, and temperature, can affect the reaction rate between catechol oxidase and the enzyme in a potato. This specific experiment was designed to test the effect that the altering of ph has on reaction rate between catechol and the potato enzyme. There will be no difference in the rates of reactions among the ph 3, ph 7, and ph 11 treatments. During the experiment, absorbance was recorded at 30-second intervals in three replicated experiments for each ph, and then later converted to concentration of benzoquinone. The averaged data were recorded in a table, then graphed on a scatter plot with lines of best fit to show the rates of the reactions, as shown below.
