Different products found in nature have different proportion of fatty acids. => changing types of fatty acids, you change the properties of product. Look at fatty acid composition of e. coli cells cultured at different temperatures. 40c: lots of palmitate (saturated) and not much of the other ones. 20c: amount of palmitate goes way down (half), amount of unsaturated fa it increases. There is a reciprocal balance between different temperatures cultures and the introduction of unsaturated fa.
