Food functionality: a property that expect nutritional value that. Can contain higher viscosity and nutrient density of ones that it does / doesn"t contain. Present naturally-occurring form, not a capsule / powder. Should regulate biological process to prevent / control disease. Fruit with natural color: mostly contain antioxidant property. Synthetic color: do not act the same as natural color. Gel + microparticle: absorbed 1st and degrade and absorbed into the body. People who can"t eat fish have to eat medicine. Reduce health care costs + support economic development in rural community. Reduce susceptibility to mental illness (true bc tested in the hospital)
