Hunter/gatherer societies did not always have food readily available and individuals that are able to accumulate fat were selected for. Our environment is set up to make us fat. Healthy food is not more expensive than unhealthy food: it is how you store it, prepare it, and cook it. Food security is defined by a situation in which all community residents can obtain a safe, culturally acceptable, nutritionally adequate diet through a sustainable food system that maximizes self-reliance and social justice . Food security is looking at whether people can access food in a safe and culturally appropriate way.
