Oligosaccharides: 3-9 cho monomers: considered to be a complex carbohydrate if we just take monosaccharides they are going to get absorbed too quickly and build up in our bodies, sugar sweetened beverages and chips. Examples: raffinose: galactose, glucose, and fructose, stachyose: 2 galactose, glucose, fructose, found in dry beans, peas, lentils, fermentation- breakdown of carbs without oxygen, indigestible carbs.
