We like to eat our food relatively young. Beef needs to be aged for 2-3 weeks. Chinese establishments can find 1000 year old eggs. Till recently didn"t know how old your eggs were- adopted policy from europe which are date stamped. Can tell whether or not egg is fresh or old- put it in water- depending on how it floats- floats horitzantally fresh- vertically stale- fresh eggs don"t spin hardboiled will b/c they have a soft centre. Romans were very fond of eggs and chickens but not good at keeping them going. Roman empress libia took it upon herself to hatch her own egg- incubated them in her busum. Eggs are a very important part of easter and western part of diet. They had too many yolks left over also whites used in monstary- starching clothes- Portugal is a major wine producer whites were often used to clarify wines.
