Document Summary
Nutrients: substances in food that provide structural materials or energy. Macronutrients: nutrients that are required in large amounts. Include water / carbohydrates / proteins / fats. Helps maintain blood pressure, involved in all cellular activities and transports nutrients. Dehydration is a decrease below the body"s required water level. 3l of water per day through sweat, urine and feces. Food intake makes up for 1. 5l gained leaving a deficit of 1. 5l humans must otherwise consume to avoid dehydration. Foods such as bread, cereal, rice, pasta, fruits and vegetables are all rich in sugars and considered carbohydrates. Polysaccharides = bonded to each other (long chains of sugar molecules) Complex carbohydrates = multi-subunit sugars composed of many different branching chains of sugar monomers. When more sugar is present than needed, it can be stored for later use. Plants store their excess carbohydrates as the complex carbohydrate starch. Animals = glycogen in their muscles and liver.
