Microbes that can be used in the food and beverage industry. Fungi and bacteria in making cheeses and fermenting beverages are all heterotrophic materials degrading the starting material and making the final product. Not always good, sometimes degrade their food samples and leave ours mouldy. This produces the most potent toxic known to man. It is also toxigenic so it produces a toxin. Causes intoxication in adults but in babies it causes infection. Infection: growth of an organism in or on your body when in shouldn"t be there. Endospores: highly resistant to chemical and physical stress. Contaminated food with pathogens can lead to food-borne infections (bacterial or viral) and or intoxications (bacterial) Listeria monocytogenes is a gram positive bacteria and can grow at 4 degrees. Food preservation and prevention of food borne disease: based on fact that (cid:498)environmental conditions may limit growth of the desired organisms.
