Inorganic elements that our bodies need in order to function: major minerals we need more than 100mg/day. Calcium, phosphorus, magnesium: trace elements we need less than 100mg/day. Structural roles: calcium, magnesium, phosphorous and fluoride are needed for the structure of bone. Iron is needed for oxygen transport in red blood cells: many minerals are needed as cofactors for enzymes. 35% organic substances: collagen (a fibrous protein) Major roles: calcium, vitamin d, phosphorous. Minor roles: magnesium, vitamin a, vitamin k, protein, fluoride. A major mineral we need > 1,000 mg/day. The most abundant mineral in the body. It makes up 1-2% of our body weight. Milk alternative and fortified foods: e. g. calcium fortified orange juice, soy milk. Fish eaten with bones: e. g. canned salmon, sardines. Dark green vegetables: kale, bok choy, chard, broccoli. Only about 25% of the calcium in foods in absorbed: less if we have a diet low in vitamin d, more like 50% when one is pregnant.
