Flip fatty acid upside down (flip flop once per month) Membrane fluidity - temperature temperature goes up: solid --> fluid. Membrane fluidity: fatty acid composition unsatured - prevents tight --> fluid saturated - tight --> not very fluid. Homeoviscous adaptation -change in fatty acid composition to counter temp. affects.
