As the temperature gets cooler, there will be less movement and decrease until the fatty acid tails stick together and the membrane gels" (solidifies) Transition temperature: the temperature at which a membrane gels". Alter the alignment of fatty acids (less packed) Eg. add kinks (remove hydrogen), trim tails, more double bonds, modify the cholesterol.
