One of major forks in metabolic road occurs at pyruvate: when oxygen is present, pyruvate is converted to acetyl-coa, when oxygen is not present, pyruvate is metabolized along a number of different pathways. Fermentation extracts energy from glucose in absence of oxygen. In absence of oxygen, pyruvate can be broken down by fermentation: does not rely on oxygen or any electron acceptors, accomplished through variety of metabolic pathways that extract energy from fuel molecules. Important for anaerobic organisms that live without oxygen, as well as organisms that favor fermentation over oxidative phosphorylation even in presence of oxygen. Also sometimes used in aerobic organisms when oxygen cannot be delivered fast enough. In presence of oxygen, nad+ is regenerated nadh donates its electrons to electron transport chain. In absence of oxygen during fermentation, nadh is oxidized to nad+ when pyruvate or derivative of pyruvate is reduced.
